Is there a way to save me from changing the parameters every time?

A: Yes, there is.

Add a video to the software > Change video/audio parameters as you need > Click "Save as" > Name the profile > Click "Ok" at the bottom

Next time, you can find it under the "Custom" tab in the format-selection panel (DVD Video Converter has a slightly different interface but the steps are the same).
